Ingredients
  • 1 cup whole wheat flour
  • 2 cups AP flour
  • 1 TBSP Baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ cup butter, melted
  • 1¼ cup buttermilk + more for brushing
Instructions
  1. Preheat oven to 400° (with cast iron pan with lid if using)
  2. Whisk together dry ingredients in a large bowl
  3. Add butter and buttermilk mixing with hands until just combined
  4. DO NOT OVERMIX
  5. Turn out onto a length of parchment and GENTLY form into a round
  6. Score deeply with a sharp knife
  7. Brush top with buttermilk
  8. Bake 20 minutes lid on and a further 20 with lid off (40 straight through if cooking on a baking sheet)
  9. Allow to cool for 30 minutes
  10. Serve with butter!
