White Bean Hummus

A simple variation of classic hummus
Recipe type: appetizer
Cuisine: Middle Eastern (via the south of France)
  • 1 can white kidney beans, rinsed and drained, liquid reserved
  • 2 TBSP tahini
  • ⅓ cup lemon juice (more or less depending on personal preference)
  • 1 - 2 large garlic cloves, minced (again amount may vary depending on preference)
  • Salt to taste
  • Fresh herbs or Z'atar and extra virgin olive oil to garnish
  1. Combine beans, tahini, lemon juice and garlic in food processor until smooth
  2. Adjust consistency by adding some of the reserved liquid and/or lemon juice to taste
  3. Garnish as you see fit with herbs although Z'atar is generally my preference (small steps people:) and a drizzle of EVO.
  4. Serve with pita or fresh chopped veg
