The Most Melt-in-your-Mouth Chicken EVER!
It was one of those questions asked that as the words were spilling out of my mouth I already regretted having asked it, wishing I could drag the words back inside before anyone noticed them hanging in the air.
“So what does everyone want for dinner?” UGH! What a truly stupid thing to ask. Of course, I would receive different answers from everyone present, and honestly that often includes opinions from people who aren’t even staying for dinner… you know who you are! Of course, they wouldn’t be what I had already considered I might actually like to cook. Of course, the requests were about as far apart from one another as culinarily conceivable.
On the plus side, I had a few ideas for what I would make for the next few nights!
Executive decision-making time. Time for a “GoTo” type of meal. One that everyone loves and no one will complain that they didn’t get “their” choice.
“Okay, Leban chicken it is!”
“Leban chicken?” I hear you ask.
Leban Chicken is the most meltingly moist piece of grilled chicken you will ever eat! FACT!
I suppose I ought to explain Leban before I move along to the actual recipe… well it’s quite simple really Leban is plain yogurt and I use it a LOT! Wait and see.

- 2 cups plain yogurt (fat content of your choice - I use fat free)
- ¼ cup olive oil
- ¼ cup lemon juice
- 1-2 TBSP dried mint (more or less to taste)
- 2-3 garlic cloves minced
- Chicken pieces - boneless skinless (for this amount of marinade I used 5 breasts and 6 thighs)
- Combine all ingredients for the marinade
- Lightly score larger pieces of chicken
- Add chicken to marinade
- Cover and refrigerate until ready to grill
